Description
We invented this cheese to provide a smaller version of our Napoleon’s Peak. Due to it’s increased surface ratio this cute little “button” packs a powerful punch! Earthy and pungent with strong notes of mushroom and pistachio; this cheese is our strongest offering and has become a favorite among our local customers. The perfect cheese for a picnic or a game night flowing with deep-red, leggy wine. We form the buttons at 1/4 lb each; after aging they usually range from 3.5oz to 4oz.
