Caerphilly is our version of the Welsh Cheddar that hails from the town in Wales that bears it’s name. One of the fun things we learned when we first decided to try our hand at a cheddar is that cheddar is a verb – the curds are “Cheddared” – meaning the curds are allowed to meld together in the bottom of our warm vat, then cut into narrow slabs and stacked to express more of the whey and give the curd a striated texture. Then the curd is broken into small pieces, salted and then pressed back into a solid wheel in the hoops. Aged on average 5-7 months this sharp and tangy cheese melts beautifully and pairs well with fruit or makes a wicked grilled cheese! We have a hard time making enough of this to keep up with demand, so check with us to make sure we have it available.
