Description
Potomac Sunrise is a curd washed cheese that we age anywhere from 3 to 9 months. It is a bit of a sweeter nutty cheese – sweeter due to lower acidity in this cheese from the curd washing. This cheese has natural mechanical holes, slices, grates and melts well as it wonderful all around semi hard cheese. The longer aging wheels are a bit dryer and sharper with a full body flavor. We call the longer aged variety: Potomac Reserve.
This price is for a half-pound piece. Cutting hard cheese is not an exact science. Product weight will vary from .3 lbs to .5 lbs. Once we have packed your order we will adjust the price of this item on your bill to reflect the weight you receive. If you prefer a smaller or larger piece, mention it in the instructions at check out and we’ll do our best to accommodate.
