Crescendo! is our version of Manchego, the national cheese of Spain – traditionally made with sheep’s milk.  This cheese with a basket weave, warm brown rind juxtaposed against a creamery white flesh is stunningly beautiful.  Lightly salty from the brining, this cheese has a pleasant mild flavor that makes it pair well with just about any dish.
